Ultimate BBQ Sandwich | ft. SMOKEY CHOCOLATE BBQ, SEITAN RIBS from The Mello Cookbook
For the Cole Slaw
6 cups shredded cabbage
1 cup shredded carrot
1 cup mayonnaise
1 can of crushed pineapple, and half of the liquid inside. You can add it all if you’d like—this is personal preference
1/4 cup white wine vinegar
1 teaspoon celery seed
1/4 cup sugar
Salt and pepper
Add everything to a large bowl and mix thoroughly. Ideally this comes out best made the day before because the longer it sits the better it gets.
Chickpea Nacho Cheese
1 can Garbanzo Beans, + water
1/4 cup Nutritional Yeast
1/8 cup diced Green Chilies
3 tbsp minced Jalapeños (optional)
1Tbs brown rice miso
1/2 a lemon, juiced
1 tsp Onion Powder
1 tsp Garlic Powder
1/4 tsp Chili Powder
1/4 tsp ground Turmeric
Salt & Pepper, to taste
Add everything but the jalapeños to a high speed blender and blend until smooth, add more water as needed for your desired consistency. Pour into a bowl and add diced jalapeños and serve! Recipe adapted from Margaret Chapman.

Toasted Sourdough Bread
Chickpea Nacho Cheese
Cole Slaw
Sliced Avocado
Dill Pickles
Seitan Ribs, cut into strips
Spread on the Chickpea Nacho Cheese, both sides of the bread. Then pile everything high on your slices of Sourdough.
